Hearturn Diet Recipe #25 - Sour-Cream Pound Cake

This is simple pound cake is a heartburn-friendly version of an old favorite, retaining the favor and texture but with less sugar, eggs, and butter. This recipe retains the flavor and texture with less sugar, eggs and butter. That means less calories for those watching their weight. If you like more flavor, fold in 1 cup of chopped dried apricots or dried cherries to the batter, or a handful of poppy seeds, or sprinkle the batter with a little cinnamon and sugar before baking.

Ingredients:
2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup butter, softened
1 1/2 cups sugar
4 egg whites, lightly beaten
1 1/2 cups fat-free sour cream
2 teaspoons vanilla extract

1. Preheat oven to 350 degrees°F.
2. Spray a 10-inch bundt pan with nonstick cooking spray. Set aside
3. Blend together flour, baking powder, and salt in a large bowl, mixing thoroughly. Set aside.
4. Cream together butter and sugar in a large bowl. Add egg whites and beat thoroughly.
5. Stir in sour cream and vanilla.
6. Add the flour mixture, mixing thoroughly.
7. Pour batter into the prepared bundt pan. Bake for 60-70 minutes, or until a toothpick inseted into the center comes out clean.
8. Cool for 10 minutes before removing the cake from the pan.
9. Sprinke with powdered sugar before serving.
