Spinach Artichoke Chicken

Ingredients:
6 boneless, skinless chicken breasts
2 Tbsp low fat cream cheese
1 tsp seasoning salt
1/4 cup panko bread crumbs
2 Tbsp grated parmesan cheese
1/2 cup chopped spinach
1/2 cup chopped artichoke hearts
2 Tbsp grated Italian cheese (such as part skim mozzarella)
2 Tbsp mayonnaise
2 Tbsp reduced-fat milk
1/2 tsp chopped garlic (optional)

Preheat oven to 375º. In a small bowl, combine panko bread crumbs with grated parmesan and set aside; this will serve as the crumb topping.

For the filling mixture, stir together chopped spinach, chopped artichokes, grated Italian cheese, mayonnaise, milk, cream cheese and garlic (optional) until well-combined.

Place chicken breasts in lightly greased shallow baking dish and sprinkle with seasoning salt. Top each chicken breast with 2 heaping tablespoons of the spinach filling. Sprinkle chicken breasts with bread crumb mixture to cover filling.

Bake for 20 to 25 minutes until topping is golden and meat thermometer reads 165º when inserted into chicken breast.

Chef’s Notes: Panko bread crumbs are a type of Japanese bread crumbs made from bread without crusts, giving the crumbs a crisper, airier texture. They can be found in most grocery stores in the international food aisle.
