Heartburn Diet Recipe #56 – Salmon Patties with Herbed Tartar Sauce

Ingredients:
Salmon Patties:
3 cans (7 1/2 ounces each) Alaskan pink salmon, drained and flaked
1 1/2 cups Panko bread crumbs, divided
1/4 cup chopped roasted red peppers (optional)
1/4 cup chopped parsley
3 egg whites, lightly beaten
2 Tbsp chopped celery
1 tsp seafood seasoning
1/2 tsp grated lemon peel
2 Tbsp olive oil, divided

Herbed Tartar Sauce:
1/4 cup reduced-fat mayonnaise
1/4 cup non-fat plain yogurt
1/4 cup relish
1 tsp ground mustard
1/2 tsp tarragon
1/4 tsp seafood seasoning

Salmon Patties:
In a large bowl, stir the salmon, 1 cup Panko bread crumbs, red peppers, parsley, egg whites, celery, seafood seasoning, and lemon peel until well combined. Add additional egg whites, if necessary, for the mixture to hold a patty shape. Using a 1/3-cup measure, form into twelve patties.

Place remaining bread crumbs in a shallow bowl. Working one at a time, place patties in bread crumbs and gently press crumbs on both sides of patties.

Warm 1 tablespoon olive oil over medium-low heat. Working in batches, if necessary, sauté patties 10–12 minutes, turning once, until breading is golden and crisp. Serve with Herbed Tartar Sauce.

Herbed Tartar Sauce:
In a bowl, stir together all ingredients. Refrigerate at least 15 minutes to allow flavors to blend.

Yield: 6 servings

Chef’s Notes: If roasted red peppers are a trigger for you, it is suggested that the serving size be reduced or replaced with a vegetable of your choice.
