Rosemary Honey Grilled Chicken
Ingredients:
1/4 cup balsamic vinegar
1/4 cup honey
2 Tbsp olive oil
2 Tbsp fresh rosemary leaves or 2 tsp dried rosemary, crushed
1/2 tsp salt
1/4 tsp pepper, if tolerated
6 bone-in chicken breasts (7 oz each)
For the marinade, in a bowl whisk together the vinegar, honey, olive oil, salt, and pepper. Pour marinade into a large resealable bag. Add chicken, seal bag, and toss to coat. Refrigerate chicken for 2 hours to allow flavors to develop.
Drain and discard marinade. Preheat grill to medium heat. Grill chicken, covered, for 25–35 minutes or until a meat thermometer inserted in the chicken reads 170°, turning once.
Chef’s Notes: Fresh rosemary heightens the flavor of this recipe. Strip rosemary leaves by running your fingertips along the stem in the opposite direction from which the leaves grow. Lightly bruise the leaves to release the fragrant flavor. Use any remaining rosemary stems, with leaves intact, as a plate garnish.
