Heartburn Diet Recipe #22: Puffy Baked Pancake With Fresh Berries

This version uses egg whites and light olive oil instead of whole eggs and lots of butter. Fresh berries and a sprinkling of confectioners’ sugar makes the pancake irresistable despite not using the usual popping  – caloric maple syrup.

Pancake:

12 large egg white
1 1/2 cups milk or orange juice
1 cup flour
1/4 cup brown sugar
1/4 cup sugar
1 teaspoon vanilla extract
3 tablespoons light olive oil
1/2 teaspoon cinnamon
Confectioners’ sugar
5 cups of mixed fresh berries
Toasted pecans, walnuts, or almond slivers (optional)

1. Preheat oven to 425°F. Spray a large shallow baking dish(a 12-inch round dish or oval is best) thoroughly with nonstick cooking spray. Set aside.
2. Combine egg whites, milk, flour, brown sugar, vanilla, olive oil and cinnamon in the pitcher of a blender of bowl of a food processor and blend or process until smooth, about 15 seconds.
3. Pour the mixture into the prepared dish and bake for 20 minutes until the sides rise and are puffy. Remove the pancake from the oven and cut into squares or wedges.
4. Serve hot, warm, or at room temperature. Sprinkle first  with confectioners’ sugar, then top with berries and nuts, if eating.
