North African Flank Steak
Ingredients:
Flank Steak
Seasoning:
2 tsp ground coriander
2 tsp ground cumin
2 tsp paprika
2 tsp dried thyme
1 tsp black pepper (optional)
1 tsp kosher salt
1/2 tsp ground cinnamon
In a 1-cup measure, stir to combine the seasoning ingredients noted above. Place plastic wrap on the counter. Lay down steak and rub spice mixture over both sides.
Grill, covered, over medium-high heat or broil 4 inches from heat for 4-6 min. on each side or until a thermometer reads 145° for medium-rare. Slice steak very thinly across the grain.
Chef’s Notes: Grill flank steak to medium-rare. After grilling, slice flank steak very thin across the grain for a moist, tender entree.
