Heartburn Diet Recipe #66 – Mushroom and Mozzarella Stuffed Chicken Breast

Ingredients:
2/3 cup fresh, chopped mushrooms
2 Tbsp chopped sun-dried tomato (if tolerated)
1 tsp dried oregano
1/2 tsp kosher salt
3 Tbsp seasoned bread crumbs
3 Tbsp grated Parmesan cheese
6 boneless, skinless chicken breasts, pounded to 3/4 inch thickness (about 6 oz each)
6 large fresh basil leaves
4 oz fresh mozzarella cheese, cut into strips
Olive oil for brushing
Combine the mushrooms, sun-dried tomato (if tolerated), oregano and salt. In a separate bowl, combine the bread crumbs and grated cheese.
To assemble chicken, place basil leaf in center of chicken breast, sprinkle 1 rounded tablespoon mushroom mixture over basil, and arrange mozzarella cheese strips across center of chicken breast. Roll up chicken breast and place seam side down in a shallow, greased baking dish. Repeat with remaining chicken.
Brush rolled chicken with oil and sprinkle lightly with bread crumb mixture. Bake, uncovered, at 400° for 30–35 minutes or until the chicken juices run clear and a meat thermometer inserted into the chicken reads 170°.
