Macaroni Salad

This is a great macaroni salad for heartburn acid reflux sufferers. It is very simple to make and appeals to kids also.

Makes 8 side servings

3 hard-boiled eggs
2 cups dry macaroni
3 green onions, white and part of green, finely chopped
2 teaspoon parsley flakes, or 2 tablesspoons fresh, finely chopped parsley
1/4 teaspoon salt
Freshly ground pepper to taste
2 tablespoon real mayonnaise
1/4 cup light or fat-free sour cream

Preparation:

  1. Start boiling the eggs if you haven’t done this already. Then boil the macaroni noodles following directions on box (boil about 8-10 minutes). Drain the noodle well and rinse with cold water and let cool.
  2. Place noodles in serving bowl along with green onions, parsley, salt and pepper to taste. In small bowl, blend mayonnaise with sour cream; add mayonnaise mixture to the noodles in serving bowl.
  3. Peel shells off eggs and remove 2 of the cooked yolks (discard other yolks). Chop remaining eggs and stir into macaroni mixture. Add more salt and pepper if needed to taste. Let sit in refrigerator overnight (if you have the time)
