Harvest Pork Loin
Ingredients:
1 tsp brown sugar
1/2 tsp kosher salt
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp onion powder (optional)
1/4 tsp ground allspice or ground cloves
Boneless pork loin roast (about 2 1/4 pounds)
For the Apple Mixture:
4 cups peeled sliced apples
1/2 cup raisins
1/2 cup apple juice
2 Tbsp brown sugar
1/2 tsp ground ginger
1/2 tsp cinnamon
In a small cup, stir together the first six ingredients (sugar through allspice). Rub the seasoning mixture over all surfaces of the pork roast. (Seasoned pork may be kept refrigerated up to 1 day for flavor to develop.) Roast pork uncovered in a shallow roasting pan at 375° for 30 minutes.
Meanwhile, stir together the apples, raisins, apple juice, brown sugar, ginger, and cinnamon in a bowl. Pour the seasoned apple mixture into the pan around the pork after the initial 30-minute baking time. Baste pork with juices.
Bake pork and fruit an additional 25-35 minutes until a meat thermometer inserted in the center of the pork roast reads 155°. Allow roast to rest 10 minutes before slicing. Top sliced pork with seasoned apples.
Yield: 6 servings
Chef’s Notes: If ground allspice is not in your pantry, substitute a little less ground cloves.
