Heartburn Diet Recipe #12 -Grilled Vegetable Sandwiches with Red Pepper Mayo
Grilled vegetables require very little embellishment. The essence of the fire is really enough, with a sprinkling of salt to bring out the flavors of the grilled vegetables. Actually, the roasted pepper mayo is the center attraction of this delicious sandwich. It does contain commercial mayonnaise that often includes GERD-instigating vinegar. The amount of vinegar is usually minute, so it rarely causes problems to heartburn patients. Otherwise, it’s a recipe that’s naturally free of acid reflux. As a bonus, you can use the sauce for other things as well – as a salad dressing, vegetable dip, or with any beef, chicken, or fish as an instant condiment.
Roasted Red Pepper Mayo:
1/2 cup fat-free mayonnaise
1 roasted red pepper (homemade, canned, or jarred) drained
Vegetables:
Olive oil, for brushing vegetables lightly
1 bell pepper, any color, cut in half lengthwise, stem and seeds removed
1 medium eggplant, unpeeled, cut lengthwise into 1/2-inch slices
3 carrots, peeled, cut in half lengthwise
3 zucchini cut in half lengthwise
12 large button or white mushrooms
Kosher salt to taste
Fresh baguettes or 8 French rolls, for making sandwiches
- Combine mayonnaise and pepper in the bowl of a food processor and process until smooth. Keep chilled until ready to use. (Makes 1 cup of sauce.)
- Preheat grill to medium high.
- Brush the vegetables very lightly with the oil and grill them on the rack or over the grates of the hot grill, for 7-10 minutes on each side, or until cooked through. Hard vegetables, such as carrots may take slightly longer.
- Season the vegetables lightly with kosher salt. Cut the vegetables into smaller pieces.
- Slice the baguettes into 6-inch lengths. Cut the pieces in half lengthwise but not all the way through, keeping a “hinge” at the bottom.
- Fill the bread pieces with grilled vegetables.
- Top each sandwich with a spoonful of roasted of roasted red pepper mayo and serve.
