Heartburn Diet Recipe #11-Grilled Mustard-Based Shrimp Kebabs
Mustard may be an irritant to some people with heartburn or GERD, so if you can’t tolerate it, leave it out of this recipe. Many people are able to enjoy small amounts, as in this savory shrimp dish. Other heartburn triggers such as onions, garlic, and lemon juice have been eliminated from this recipe. Fresh gingerroot, safe for those with acid reflux, replaces the favor lost. You may also skip the skewers and simply broil or sear these shrimp if you wish.
BASTING SAUCE:
2 tablespoons minced fresh gingerroot
1 tablespoon brown sugar
1 tablespoon Dijon mustard (as tolerated)
3 tablespoons olive oil
1 tablespoon Worcestershire sauce
1 tablespoon dried parsley flakes
40 very large (25-30 per pound) raw shrimp, peeled and deveined, tail left on 8 long metal skewers or 8 bamboo skewers (10 inches long or more), soaked an hour or more in water
- Prepare the basting sauce: Whisk together the basting sauce ingredients, and set aside.
- Heat grill to medium high.
- Thread 5 shrimp per skewer (you may wish to use two skewers per kebab so that the shrimp don’t spin on the skewers).
- Baste one side of the kebabs with basting sauce and grill the kebabs, basted side down, until lightly cooked, about 3 minutes.
- Brush un-basted side of the kebabs with basting sauce and turn to grill other side. Grill kebabs until underside is lightly charred, about 3 minutes more. Discard unused basting sauce.
- Immediately serve the kebabs if you want to eat them hot, or serve at room temperature.
