Heartburn Diet Recipe #16- Gerd-friendly Coleslaw
This coleslaw recipe allows you to make 8 servings.
Coleslaw
Ingredients:
- 1/3 cup of sugar
- 1/2 teaspoon of salt
- 1/8 teaspoon of freshly ground pepper (if tolerated).
- 1/4 cup low-fat milk (whole milk can be used if you want)
- 2 tablespoons of real mayonnaise
- 6 tablespoons of fat-free or light sour cream
- 1/4 cup low-fat buttermilk
- 1 1/2 tablespoons of white vinegar (seasoned rice vinegar can be substituted)
- 2 1/2 tablespoons of lemon juice
- 8 cups finely chopped or shredded cabbage (about 1 medium head)
- 1 cup grated carrots
1. Combine the sugar, salt, pepper, milk, mayonnaise, sour cream, buttermilk, vinegar and lemon juice in a large mixing bowl. Beat them on low speed until smooth
2. Add cabbage, carrots and toss to blend with dressing. Cover and refrigerate until served
