Heartburn Diet Recipe #57 – Sesame Ginger Chicken
Ingredients:
1/4 cup soy sauce
1/4 cup honey
1 Tbsp toasted sesame oil
1 Tbsp grated ginger
1/2 tsp black pepper, if tolerated
6 boneless, skinless chicken breasts (4 oz each)
1 Tbl toasted sesame seeds
In a small bowl, whisk together the soy sauce, honey, sesame oil, ginger, and pepper. Pour half the marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for at least 2 hours. Cover and refrigerate remaining marinade.
Drain and discard marinade. Grill chicken, covered, over medium heat or broil 4 in. from heat for about 7 minutes. Turn and brush with remaining marinade. Grill an additional 5–7 minutes or until a meat thermometer inserted into the chicken reads 165°.
Sprinkle chicken with toasted sesame seeds before serving.
Yield: 6 servings
Chef’s Notes: Look for toasted sesame oil with the Asian foods or specialty oils at your grocery store.
To toast sesame seeds, place seeds in a skillet over medium heat. Toast seeds, shaking the pan occasionally, for 3–5 minutes until the seeds darken and become fragrant.
