Heartburn Diet Recipe #55 – Braised Pork Chops with Applesauce

Serves 2

Ingredients:
1/2 cup unsweetened applesauce
Pinch ground ginger
1 crushed garlic clove (optional)
2 tsp. reduced-sodium soy sauce
2 tsp. vegetable oil
2 lean boneless pork chops
1/2 cup long-grain white rice
2 cup broccoli florets
1/2 cup carrots, sliced thinly
1 cup cauliflower florets

Preparation:
Mix together the unsweetened applesauce, ginger, crushed garlic (optional) and soy sauce in a small bowl and set aside.

Over a medium-high heat, heat the vegetable oil in a frying pan.

Add the pork chops and cook for 7–8 minutes, browning on both sides.

Spoon the applesauce mixture over the pork chops, reduce the heat and cover.

Simmer over a low heat for about 20 minutes or until the pork chops are cooked through and tender.

Meanwhile, cook the rice according to the directions and put the vegetables on to steam 5 minutes before the pork is cooked.

Serve the pork chop on a bed of rice with the steamed vegetables on the side.
