Baked Salmon with Couscous
Ingredients:
* Nonstick vegetable cooking spray
* 1 tsp reduced-sodium soy sauce
* 1/4 tsp brown sugar
* 1/2 tsp fresh grated ginger
* 1, 6 oz salmon fillet (1″ thick)
* 1/2 cup water
* 1/2 tsp chicken bouillon granules
* 1/2 cup green beans
* 1/4 cup mushrooms, sliced thin
* 1/4 cup dry couscous
Makes 1 serving
Preparation:
- 1. Preheat oven to 450°F. Coat a shallow baking pan with vegetable spray; set aside.
- Combine in a small bowl the soy sauce, brown sugar, and grated fresh ginger. Arrange fillet in prepared baking pan and drizzle soy sauce mixture evenly over salmon.
- Bake covered for 10 to 12 minutes or until fish flakes easily when tested with a fork.
- Meanwhile, in a saucepan bring water, chicken bouillon granules, mushrooms, and green beans to boiling. Cover saucepan and cook for 3 minutes or until green beans are tender.
- Stir in dry couscous. Remove from heat, cover, and let stand 5 minutes. Serve salmon with hot couscous.
