Baked Salmon with Couscous

Ingredients:

* Nonstick vegetable cooking spray

* 1 tsp reduced-sodium soy sauce

* 1/4 tsp brown sugar

* 1/2 tsp fresh grated ginger

* 1, 6 oz salmon fillet (1″ thick)

* 1/2 cup water

* 1/2 tsp chicken bouillon granules

* 1/2 cup green beans

* 1/4 cup mushrooms, sliced thin

* 1/4 cup dry couscous

Makes 1 serving

Preparation:

  1. 1. Preheat oven to 450°F. Coat a shallow baking pan with vegetable spray; set aside.
  2. Combine in a small bowl the soy sauce, brown sugar, and grated fresh ginger. Arrange fillet in prepared baking pan and drizzle soy sauce mixture evenly over salmon.
  3. Bake covered for 10 to 12 minutes or until fish flakes easily when tested with a fork.
  4. Meanwhile, in a saucepan bring water, chicken bouillon granules, mushrooms, and green beans to boiling. Cover saucepan and cook for 3 minutes or until green beans are tender.
  5. Stir in dry couscous. Remove from heat, cover, and let stand 5 minutes. Serve salmon with hot couscous.
