<p><strong>Preparation</strong> <strong><em>Marinate pork chops:</em></strong><br />
Stir together milk and 2 teaspoons salt in a shallow 3-quart dish, then add pork chops. Marinate, covered and chilled, turning over once, at least 1 hour.</p>
<p><em><strong>Make applesauce while chops marinate</strong></em>:<br />
Peel, core, and coarsely chop apples, then stir together with remaining applesauce ingredients in a 3-quart heavy saucepan.<br />
Bring to a simmer, stirring occasionally, then reduce heat to moderately low and cook, covered, stirring occasionally, until apples are falling apart, 15 to 20 minutes.<br />
Discard bay leaf and mash apples with a fork.<br />
Keep applesauce warm, covered.</p>
<p><em><strong>Fry pork chops:</strong></em><br />
Preheat oven to 200°F.<br />
Stir together bread crumbs, garlic, rosemary, thyme, and remaining teaspoon salt in a shallow bowl.<br />
Lift pork chops from milk 1 at a time, letting excess drip off, and dredge in bread crumbs, lightly patting crumbs to help adhere, then transfer to a tray, arranging in 1 layer.<br />
Heat 2 tablespoons oil and 2 tablespoons butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté pork chops in 2 or 3 batches, without crowding, turning over once, until golden brown and just cooked through, 5 to 6 minutes per batch.<br />
Transfer as cooked to a platter and keep warm in oven. (Add more oil and butter to skillet as needed.)  <strong><br />
Serve pork chops with applesauce.</strong></p>

<p>What could be worse than a food-related holiday? Although it may seem like a recipe for heartburn pain, there are things you can do to help prevent acid reflux on the big day.</p>
<p>First, choose the right food (and drinks). Second, don&#8217;t eat too much at once. (Read more about daily habits that curb heartburn.)</p>
<p>A major cause of heartburn is overeating, which can push acid into the heartburn-generating danger zone.</p>
<p><strong>Selecting a salad</strong></p>
<p>Salads are good news for those with chronic heartburn or GERD—if you have the right salad dressing and ingredients, that is.</p>
<p>High-fat foods are a known trigger for acid reflux, so the National Heartburn Alliance recommends avoiding creamy salad dressings, as well as oil and vinegar.</p>
<p>Your best bet is a low-fat salad dressing, and avoid tomatoes, raw onions, and other acid-aggravating ingredients. (Want fruit in your salad? Choose apples, not oranges, if you want to avoid heartburn.)</p>
<p><strong>Eat more ginger</strong></p>
<p>Ginger is one ingredient that can help ease heartburn, if you don&#8217;t get too much of it. (More than 2 to 4 grams per day can actually cause heartburn.)</p>
<p>Ginger is a natural match for root vegetable dishes commonly served during the holidays. Heartburn-friendly vegetables include carrots, cabbage, peas, broccoli, and green beans.</p>
<p><strong>Choose multigrain rolls or bread</strong></p>
<p>When choosing grain-based food for the holiday, you can&#8217;t go wrong with multigrain bread or rolls. Corn bread and white bread are good choices too, if you want to avoid heartburn.</p>
<p>One side dish that should be strictly for the kids, however, is macaroni and cheese. This is one of those dishes known to trigger acid reflux, according to the National Heartburn Alliance.</p>
<p>Dried cranberries are relatively low-risk in terms of acid reflux, but avoid cranberry juice.</p>
<p><strong>Choose baked, not mashed</strong></p>
<p>If you have chronic heartburn, you don&#8217;t have to give up your favorite foods. You just have to choose wisely to save yourself some pain later on.</p>
<p>For example, mashed potatoes can trigger heartburn, but baked potatoes may not. When it comes to dairy products, the less fat the better. So limit butter and avoid sour cream.</p>
<p>But if you simply can&#8217;t live without sour cream on your baked potato, choose a low-fat variety to limit acid reflux.</p>
<p><strong>Eat light turkey, not dark</strong></p>
<p>High-fat food can spell trouble if you&#8217;re prone to heartburn, so do yourself a favor and skip the skin when it comes to turkey time.</p>
<p>You&#8217;re best bet is to eat turkey breast and avoid oilier dark meat.</p>
<p>The same goes for gravy. If it&#8217;s not fat free, it may be smarter to skip this dish.</p>
<p><strong>How to end the meal</strong></p>
<p>If you&#8217;ve made smart choices so far, don&#8217;t get tripped up by the beverages or after-meal choices. In fact, choosing to drink alcohol or caffeinated beverages may trigger heartburn no matter what you eat.</p>
<p>The National Heartburn Alliance recommends mineral water as your safest bet; even nonalcoholic wine or beer can pose an intermediate risk. When choosing dessert, avoid chocolate (apple pie may be your best bet), and don&#8217;t follow your meal with a cigarette—a well-known heartburn trigger.</p>
<p>A post-meal walk is probably better than a nap, and when you do hit the pillow, make sure to sleep with your head elevated 6 to 8 inches to curb acid reflux.</p>

			<content:encoded><![CDATA[<p><strong>Question</strong>: <em>My significant other’s health problems began six months ago with severe shortness of breath and an upset stomach occurring as soon as he ate anything. This progressed to fluid buildup and pain in the ankles, knees, wrists, hands and elbows. Each day, a different joint would be involved. He was about to finish a semester in college and tried to put off seeing a doctor, but things became so bad, he gave in. He was immediately admitted to the hospital in a wheelchair.</em></p>
<p><em>He was eventually diagnosed with iron-deficiency anemia. He had become dehydrated, and his hemoglobin level was so low that he was given two transfusions of blood. Thinking that he had a severe internal bleed, doctors began testing with endoscopies everywhere, and he ended up with a nine-day stay at the hospital. Once released, he was put on iron supplements.</em></p>
<p><em>After finally speaking to one of the doctors at the hospital who took a real interest, he sorted through all the records and found my companion had been taking prescription acid-reflux medicine for about five years, medication that can inhibit iron from being absorbed. Bingo!</em></p>
<p><em>Since this has happened, we have heard from several of our neighbors, friends and acquaintances who have been on prescription acid-reflux medicine for a period of time and who have also been diagnosed with iron-deficiency anemia. They, too, have had to endure long-term testing. Have you heard of this before? Or has the problem just popped up overnight?</em></p>
<p><strong>Answer:</strong> Iron-deficiency anemia is a condition in which blood lacks adequate amounts of healthy red blood cells, the same cells that carry oxygen to the body’s tissues and provide energy. Without significant iron, the body cannot produce enough hemoglobin, a component in red blood cells that allows oxygenated blood to be carried throughout the body. The result is fatigue, weakness, shortness of breath, poor appetite, irritability, a pale or ashen color to the skin and more.</p>
<p>The most common reasons for this condition are blood loss, a lack of iron in the diet and an inability to absorb iron. Afflictions such as Crohn’s or celiac disease affect the intestine’s ability to absorb nutrients from digested food. And some medications, such as those taken for combating excess stomach acid, are known to interfere with iron absorption. Thus, I’m quite surprised your partner’s primary-care physician, who prescribed the medication, was in the dark.</p>
<p>Diagnostic testing to identify possible underlying causes includes endoscopy, colonoscopy and ultrasound (for women). <p><strong>Answer:</strong> GERD (gastroesophageal reflux disease) occurs when the muscle at the end of your esophagus does not function properly and can cause stomach acid to leak into the esophagus. Two of the major symptoms of GERD are heartburn and acid indigestion. If you suffer from either of these symptoms on a regular basis, you may be suffering from GERD. However, many who have GERD do not have symptoms (also known as silent reflux)</p>
<p>Tips to Reduce Your GERD symptoms</p>
<p>Unlike what you read on the Internet, eating apples will not cure GERD totally. So far, there is no such cure for GERD and the best way you can do is to control your diet. Here are <strong>some dietary changes you can make that will help alleviate the symptoms.</strong></p>
<p>1. <em>Lose weight if you&#8217;re overweight.</em> A bulging belly can &#8216;push&#8217; food upwards in the stomach and cause reflux. Even a 10 lb weight reduction will help.</p>
<p>2. <em>Limit high fat foods</em> like fried food, high fat desserts, fatty cuts of meat, fast food and food made with whole milk (such as cheese and ice cream). Fatty foods &#8217;stick to your ribs&#8217; and are digested more slowly than carbohydrates or protein, which means they will hang around your stomach longer, increasing the risk for reflux.</p>
<p>3. <em>Don&#8217;t smoke and stop if you do.</em> In addition to a higher risk of cancer, lung disease &amp; heart disease, smoking aggravates symptoms of GERD as it increases stomach acid production.</p>
<p>4. <em>Avoid alcohol, caffeine and carbonated drinks.</em> All of these increase the production of acid in the stomach and can exacerbate symptoms of GERD.</p>
<p>5. <em>Don&#8217;t lie down after eating.</em> Gravity will take over and increase the likelihood of acid reflux.</p>
<p>6. <em>Limit peppermint and chocolate</em> as both lower esophageal sphincter pressure, which increases the risk for reflux.</p>

<p><strong>Ingredients:</strong><br />
16 ounces     boneless skinless chicken breast (cut into 1 inch cubes)<br />
2 tsp     low-sodium soy sauce<br />
2 tsp     sake or sweet white wine<br />
1 tsp     sesame oil<br />
2 tsp     rice vinegar<br />
2 tsp     honey<br />
1 tsp     cornstarch<br />
2 cups     water<br />
1 cup     jasmine rice<br />
1 tbsp     sesame oil<br />
1 inch ginger root (peeled and minced)<br />
2 Tbsp     rice vinegar<br />
2 Tbsp     low-sodium soy sauce<br />
3/4 cup     water<br />
1/4 cup     dry roasted peanuts (chopped coarsely)</p>
<p><strong>Preparation</strong>:</p>
<p>1) Place the 2 teaspoons low-sodium soy sauce, sake, 1 teaspoon sesame oil, rice vinegar, honey and cornstarch in a bowl and stir until well blended. Add the chicken breast cubes and toss until coated. Place the bowl in the refrigerator.</p>
<p>2) While the chicken is marinating place the water in a medium sauce pan over high heat. When the water boils, stir in the jasmine rice.</p>
<p>3) Reduce heat to medium-low and simmer, partially covered, for about 25 &#8211; 30 minutes.</p>
<p>4) Do not boil away all of the liquid and do not stir the rice.</p>
<p>5) When a very small amount of liquid remains, remove the pan from the burner and let it stand, covered, for 5 minutes before serving.</p>
<p>6) Add the sesame oil and heat for a few moments. Reduce the heat to medium and add the ginger. Cook for about one minute.</p>
<p>7) Add the chicken and cook for about one minute until browned on the outside.</p>
<p>8.) Add the rice vinegar and soy sauce. Cook the chicken tossing frequently. When the chicken is nearly done add the water and stir until well blended. When the chicken is cooked through serve over the rice and top with the peanuts.</p>

<p>Cooking Time = 30 Minutes</p>
<p><strong>Instructions: </strong><br />
- Preheat oven to 375°F.<br />
- Separate the egg into an egg white and egg yolk. Set the egg yolk aside and whisk the egg white until frothy.<br />
- Cream together the reduced-fat spread and egg yolk until smooth. Add the sugar, yogurt and vanilla extract.<br />
- Whisk until smooth.<br />
- Place the all-purpose flour, whole wheat flour, wheat germ, salt, baking powder and baking soda in a sifter and sift into the mixing bowl.<br />
- Gently fold the creamed mixture together with the flour mixture. As this is blended slowly add the buttermilk folding until smooth. As soon as the mixture is well blended, stop.<br />
- Froth the egg whites until white and foamy and fold them into the batter. Gently fold the blueberries into the batter. Do not over mix.<br />
- Line a muffin tin with muffin papers and fill each muffin paper with an equal amount of batter. Bake for 12 – 15 minutes.</p>
<p>This recipe can be multiplied by 2,3,4.</p>
<p>Muffins will keep for 24 &#8211; 36 hours in a plastic bag. These freeze fairly well if sealed tightly in a plastic bag.</p>
