Ingredients:</strong></p>
<p>1 tbsp olive oil<br />
1 tsp oregano<br />
1 tsp basil<br />
1/2 tsp rosemary<br />
1 1/2 lb boneless skinned, chicken breast, cut into 1&#8243; pieces<br />
Nonstick vegetable cooking spray<br />
4 cups zucchini cut into 1&#8243; pieces<br />
3 cups button mushrooms, stems removed<br />
8, 10&#8243; wooden skewers, soaked in water for 20 minutes<br />
1 cup long-grain brown rice, cooked according to directions without salt or fat</p>
<h3 id="rP">Preparation:</h3>
<div>
<ul>
<li> In a medium-size bowl combine olive oil, oregano, basil, rosemary and parsley.</li>
<li> Add chicken pieces to bowl and mix well.</li>
<li> Let sit for 5 minutes.</li>
<li> Spray a broiler pan with nonstick vegetable spray.</li>
<li> Stir zucchini pieces and mushrooms into the bowl of chicken mixture and stir to blend.</li>
<li> Thread chicken, mushrooms and zucchini pieces, alternating them, on all 8 skewers.</li>
<li> Place kabobs on broiler pan</li>
<li> Broil 5 minutes on each side, turning once.</li>
<li> Serve with hot brown rice.</li>

1/2 cup fresh whole wheat bread crumbs (approximately 2 slices bread)<br />
1/2 cup cooked chopped spinach<br />
1/3 cup corn kernels<br />
1/3 cup diced carrots<br />
1 egg, lightly beaten<br />
2 Tbsp Worcestershire sauce<br />
1 tsp poultry seasoning<br />
1 tsp salt<br />
2 lbs lean ground turkey<br />
1/2 cup whole berry cranberry sauce<br />
2 Tbsp apple juice</p>
<p>In a large bowl, combine the breadcrumbs, spinach, corn, carrots, egg, Worcestershire sauce, poultry seasoning, and salt. Crumble turkey over the mixture and mix well. Form into two loaves, about 6-in. x 3 1/2-in. Place loaves in an ungreased 13-in. x 9-in. pan.</p>
<p>Bake, uncovered, at 375° for 35 minutes. Meanwhile, in a measuring cup, stir the cranberry sauce and apple juice until well combined. Drizzle over partially cooked meatloaves. Bake loaves an additional 15–25 minutes until a thermometer inserted in the meatloaves reads 165°. Allow loaves to rest 10 minutes before slicing.</p>
<p><strong>Chef’s Notes: </strong>To make fresh breadcrumbs, place torn bread slices in a food processor or blender and process. To use fresh spinach, wash, rinse, and coarsely chop 4 cups spinach leaves. Place in a microwave-safe bowl, loosely cover, and cook about 2 minutes on high. The residual water on the spinach leaves provides sufficient water for microwave cooking. When cool enough to handle, press spinach dry and measure. After baking the meatloaf, drain off any excess grease or liquid.<br />

<p><strong>Grilled Chicken Fingers:</strong><br />
To marinate the chicken, in a large resealable bag, add chicken, broth, coconut milk, brown sugar and fish sauce. Seal bag and toss to coat. Allow chicken to marinate, refrigerated, at least 2 hours or overnight.</p>
<p>Remove chicken from marinade; discard marinade. Thread chicken on skewers. Grill skewers over medium-high heat (450°) on a lightly oiled grate for 8-10 minutes, turning once. Serve with Peanut Dipping Sauce.</p>
<p><strong>Peanut Dipping Sauce:</strong><br />
In a bowl, whisk the sauce ingredients until smooth. Serve immediately or refrigerate.</p>

<p>Coconut milk is a derivative of coconut meat and has the consistency of cream. It is not the liquid from the middle of a coconut nor does it contain any dairy. This staple of Southeast Asian cuisine is available in regular and reduced-fat; we’ve opted for the reduced-fat version.</p>

<p><strong>Preparation: </strong><br />
- In a blender or food processor, place 1/2 cup white beans and 1/4 cup chicken broth. Cover and process until smooth.<br />
- In a large soup kettle, add bean puree, remaining chicken broth, turkey, corn, black beans, chiles, cumin, oregano, garlic powder, and salt.<br />
- Bring to a boil. Reduce heat and simmer, uncovered, for 20 to 25 minutes.<br />
- Remove from heat.<br />
- Stir about 1/4 cup of the cooked chili mixture into the sour cream.<br />
- Stir tempered sour cream and cilantro into the chili mixture until combined.<br />
- If chili is too thick, thin with fat-free milk. Serve in bowls topped with sour cream and cheese.<br />
